Just completed the season 2 of Hayate no Gotoku, almost finished with season 1 of Shakugan no Shana, up to date with K-on and Bleach. List has dwindled down..
Need some suggestions to restock the list with :D
What I have watched includes
Bakemonogatari, Clannad, Air, .Hack, Inuyasha, Naruto, Started Maburaho, Kampfer, Toradora, Haruhi, some Lucky Star, NHK, started Ookami, Death Note, Some Rurouni Kension, half of to aru kagaku no index, most of railgun, full metal alchemist, full metal panic, gakuen alice, some gintama, school days, school rumble, myself yourself, chaos head, ranma, season 1 zetsubou sensei, shugo chara, some fairy tail, chu bra, started hellgirl, higurashi, some to love ru, some zero no tsukaima..
I've watched episode 1 of each of the summer 2010 anime wasn't satisfied, maybe someone can convince me otherwise?

Code Geass - popular, but it had that wit that Death Note had. Very cleverly plotted -- phenomenal series ending.
Blood+ - Has boring parts but overall good vamp flick.
Elfen Lied - tits and blood. What more could you want?
Trinity Blood - Goooooddd c:
Vampire Knight - love trianglee.
Samurai 7 - good yes yes.
Samurai Champloo - lolfunny and action-y
Gurren Lagann - just for Kamina

I'm gonna second Cowboy Bebop. That show is pure class. If you asked me to define "cool", I'd probably just point you to the intro. Then I'd point you to the rest of the show. This is just one of those series where everything just works. However, this is a VERY rare case where I actually recommend watching the dub over the original. Steven Jay Blum was practically tailor made to voice Spike. Also seconding Samurai Champloo. Not quite as good as Cowboy Bebop, but it's from the same guy, so you get similarly awesome music, animation, and episodic storytelling with an overarching plot carefully woven in. A definite must-watch. Also ALSO seconding TTGL (Miss Wrath, I must say you have excellent taste in anime :3). However, allow me to expand on her opinion and state that you should totally watch it for Kamina in addition to just about everything else. Seriously, this show is, without exaggeration, the single most badass piece of animation I have ever seen. If you demand anything resembling realism in your Mecha Anime, then yeah, this show might not be for you. It takes the laws of physics, punches them out of the space-time continuum, and then throws a galaxy at them. If you're a fan of Super Robot anime, I can't recommend this one enough. Oh, and Code Geass is good, too. This one wasn't really my cup of tea, though; I didn't enjoy it personally, but that all comes down to preference. It really is a very clever, exciting show, but I can't say much about it because I never got that into it. I also saw a lot of DeathNote in this one. OTHER recommendations: -FLCL: Another piece of Gainax excellence, this one is just weird in a very good way. It's a surreal, post-modern masterpiece that could basically be described as "anime on all sorts of wonderful, wonderful drugs". Only six episodes, but hilarious and with a rockin' soundtrack provided by The Pillows (a kind of atypical J-Rock band that sorta reminds me of The Beatles). -Berserk: Well, okay, in this case, you should probably read the manga. The anime is basically a 26 episode commercial for the manga, which is a beautifully drawn work of nonstop manliness and gore which nonetheless manages to be amazingly intelligent and well-written. I'd go so far as to say this is the best-drawn manga I've ever read. -Azumanga Daioh: C'mon, this is just the definition of ":3". But it's the sort of thing you have to see for yourself; all I can really say is that it's a very atypical slice-of-life comedy. -Hellsing: I never really was into the whole "vampire craze" that was sweeping anime for a while, but this one is just good. Another case where you'd probably be better off reading the manga, but both the anime and OVA are great in their own rights. Basically, this is just an action-packed bloodbath featuring an ultrabadass who sports a kickin' rad pimp hat.

I also forgot to add Basilisk in.
And as for Hellsing -- I read the manga, which was BEAST. Watched a few episodes of the anime...pure shiit.

Not sure how I didn't put Flcl on my list... or Cowboy Bebop.. hm.. watched them both lol
Starting on High School of the Dead and Kaichou wa Maid-sama today. Might watch some of the others you listed too lol depends if I can find anything else to occupy myself.

Ooooh, totally seconding Basilisk. That right there is a ninja anime done right.
As for Hellsing, yes, you'd be better off watching the OVA than the anime. Of course, your BEST option would be to read the manga; it's really not all that long (ten volumes), and it's definitely superior to both animated adaptations by far. However, if you're somehow unable to come across the manga (I know One Manga is down, at least, so it can be tough), the OVA is the better choice between the two.
Also, this one is a total oldie, but a classic nonetheless. If you're into fighting anime, Fist of The North Star pretty much defined the entire genre. It's basically a post-apocalyptic kung fu epic starring one of the manliest protagonists in the world of anime. It reeks of the 80s, to be sure, what with its ultra-gritty setting and endless violence, but I find it impossible not to love a series where the hero's entire fighting style revolves around making his foes explode in the most violent ways possible.
Oh, and Gintama. This is another one I can't really say anything about; you're just going to have to take my word that it's worth checking out. ^^; Another familiar with the series can probably attest to that.
There's also some anime movies that are nothing less than works of art. Akira, Sword of the Stranger, Paprika (one of my all-time favorites), and pretty much everything made by Hayao Miyazaki, just to name a few.

Dude just watch Gintama, that anime is badass it starts off as silly, weird and funny but later on down the road you have some of the sickest sword fights you will ever see.
Grappler Baki, slightly on the over the top side but follows the philosophy of martial arts to the fucking 'T' and the fights as just straight up badass.
Hajime no Ippo, kind of slow the animation is ok, but later on down the road it gets pretty damn good with great fight scenes to it.
